Savory Mushroom Pizza

One thing I love about making pizza is that you don’t have to have a set recipe. I like to look at what I have in the frig and then think outside the box.

This recipe is not about exact amounts, it’s simply about inspiration for a savory pizza.

Ingredients

White Bean Pizza Sauce or Hummus

Fresh or pre-made pizza crust or whole wheat tortillas - I Iike Atoria’s Whole Grain and Flax Lavash or any whole wheat pizza crust

Red Onion, slice thin and caramelized

Mushrooms, fresh sliced and sauteed to enhance the flavor

Spinach, fresh and sliced into thin ribbons

1/2 teaspoon dried thyme leaves - more or less depending on the size pizza you’re making

Capers, rinsed to remove the excess brine flavor (optional) - sliced black or kalamata olives would be good too

Instructions

  1. Preheat oven to 425 degrees. If you have a pizza stone, throw it in and preheat too!

  2. Spread White Bean Pizza Sauce or hummus onto your pizza crust or tortillas, as much of this savory goodness as you wish.

  3. Sprinkle with a slight amount of thyme leaves.

  4. Top with red onion, mushrooms, spinach ribbons and capers or olives if using.

  5. If you’re using a pizza stone, carefully slide the crust onto the stone. If not, place your baking sheet in the oven.

  6. Bake for 10-20 minutes, checking for desired crispness after 10 minutes.
