Jane Esselstyn’s 3-2-1 No-Oil Salad Dressing

This is so ridiculously simple to make, I can’t believe it took me so long to discover this recipe! Let’s give credit where credit is due. Those Esselstyn’s inspire us to eat healthy everyday which is easy with great recipes like this one. Thank you Rip and Jane!

3-2-1 No-Oil Salad Dressing

  • 3 Tbsp balsamic, red wine, or white wine vinegar…feel free to use any flavored vinegar you like such as raspberry or citrus flavors

  • 2 Tbsp mustard...Dijon, yellow mustard or any other mustard you like

  • 1 Tbsp liquid sweetener, agave syrup, maple syrup, or honey

  • Measure into a small jar and shake it up good. I like to use my Bullet with the small sized cup, it does a nice job of emulsifying the mixture.

  • Optional add-ins: minced shallots, garlic, chives, fresh basil or tarragon, capers

  • Store in the refrigerator for up to 7 days

Note

  • The color of this salad dressing will vary based on the type of vinegar and mustard you use.

  • Use your imagination on what you can toss this with; on a green salad, tossed in a pasta salad or drizzled over a potato salad.

  • Double or triple the ingredients for larger batches.
