Spicy Peanut Sauce

I can’t begin to tell you how many peanut sauce variations I have made to achieve the perfect formula. I was looking for rich flavor, creamy consistency, a handful of ingredients, all the while being quick and easy to prepare. A formula that would delight the palate whether it be drizzled on greens, tossed with noodles, or smeared on a pizza crust. I nailed it, enjoy!

Ingredients

1/2 cup peanut butter, I prefer fresh ground - can substitute with almond butter if you have a peanut allergy

1/4 cup hot water, you might need a little bit more if this amount is too thick and you prefer a thinner sauce

1 Tbsp liquid sweetener such as agave, maple syrup or date paste

2 Tbsp tamari, soy sauce or coconut aminos

1 Tbsp rice wine

2 tsp sambal oelek, or to taste

Instructions

  1. Whisk all of the ingredients together in a bowl or in the jar of a Magic Bullet blender, blend until smooth. An immersion blender works great too with all ingredients in a quart jar. Add additional sambal oelek if you prefer a bit more heat.

  2. If the sauce seems too thick, add a little bit more hot water. Taste and adjust the sauce until you achieve the heat level and consistency you prefer. If you like it a little saltier, add a little more soy sauce.

  3. Serve on a salad, as a dip, tossed with noodles or as the base on a pizza and top it with stir-fried vegetables and a drizzle of additional Peanut Sauce.
