Plant-Based Oatmeal-Berry Bake
This plant-based Oatmeal-Berry Bake is a healthy version of a classic, making for an easy breakfast bake or dessert. Juicy berries are layered underneath a crunchy oatmeal topping. You could serve it on its own for breakfast, or as a dessert with a scoop of plant-based ice cream on top.
Ingredients:
2 cups bananas, ripe, smashed
1 cup raisins, yellow or red
1/4 cup walnuts, chopped
1/4 cup pecans, chopped
1/4 cup dates or prunes, dried, pitted, chopped
2 tsp vanilla extract
2 cups rolled oats
1/2 tsp cinnamon or chai spice mix
2 cups berries, fresh or frozen and halved if using strawberries - a mix of berries is also delicious
1/4 cup orange juice, freshly squeezed
Instructions:
Mash bananas in a large mixing bowl.
Add raisins, walnuts, pecans, dried dates or prunes, chai spice mix, and vanilla extract, then mix.
Add oatmeal and stir until well combined.
Layer the bottom of a glass or ceramic baking dish with berries, then squeeze fresh orange juice over the berries.
Add oatmeal mixture on top.
Bake at 350 F for 20-25 minutes and serve warm.
This is an easy recipe to cut in half for serving 2 people, otherwise a full recipe will serve 4-6.
