Instant Pot Batch Mashed Potatoes

It’s that time of year where everyone is dropping the “P” word. While that might mean pumpkin to the masses, it means POTATOES to me. Smoothy and creamy mashed potatoes, there’s nothing like it. If you haven’t quite achieved a creamy consistency of mashed potatoes since going plant-based, give these mashers a try! This recipe is made using a 6 quart Instant Pot.

Ingredients

Potatoes, peeled and cut into 1” cubes - I use russet potatoes

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1 large garlic clove, minced

Fresh ground black pepper

3 cups water

Instructions

  1. Place water into the kettle of a 6 quart Instant Pot. Stir in the onion powder, garlic powder, minced garlic and a grinding of black pepper.

  2. Peel a bunch of potatoes and place in the Instant Pot up to the fill line. I’m not going to say how many potatoes, it all depends on the size.

  3. Place lid on the Instant Pot and turn on to High pressure for 5 minutes. Be sure to place the steam release valve into the closed position.

  4. Once the timer goes off, move the steam release valve to the open position, be careful, the steam is hot. I like to place a towel over the valve as the steam releases so the moisture doesn’t spray on my counter. Drain the potatoes into a large colander.

  5. Place the potatoes back in the the Instant Pot kettle and using an electric hand mixer, mix the potatoes until they’re smooth and creamy. Yes, you can mash them by hand but they won’t be as smooth than they will be using an electric mixer.
