Easy No-Chicken Noodle Soup
Ingredients
4 ounces Butler Soy Curls
1 large onion, diced
4 celery stalks, sliced
3 large carrots, sliced thin
4 garlic cloves, minced
1/2 teaspoon dried thyme
2 bay leaves
fresh ground black pepper to taste
8 cups vegetable stock, low sodium if you purchase store-bought
3 tablespoons nutritional yeast
8 ounces whole grain linguine noodles or rotini noodles
1/4 cup chopped kale
Instructions
Place the soy curls into a bowl and cover with hot water. Soak for 10-15 minutes, until fully hydrated. Drain and set aside.
In a large pot, saute the onion, celery, carrots, and garlic in a small amount of water over medium heat until the onion is translucent.
Add the vegetable stock, thyme, bay leaves, nutritional yeast, and a few grindings of black pepper, stir, and bring to a boil.
Add the drained soy curls and pasta and cook for 10-15 minutes or until the pasta is cooked. Remove from the heat, discard the bay leaves, and stir in the chopped kale.
