Easy No-Chicken Noodle Soup

Warm up with this comforting and wholesome No-Chicken Noodle Soup! Packed with soy curls for a hearty twist, tender carrots, onions, celery, and fragrant thyme. It’s a simple yet satisfying take on a classic favorite, bringing all the cozy flavors you love in a nourishing, meat-free bowl.

Ingredients

4 ounces Butler Soy Curls

1 large onion, diced

4 celery stalks, sliced

3 large carrots, sliced thin

4 garlic cloves, minced

1/2 teaspoon dried thyme

2 bay leaves

fresh ground black pepper to taste

8 cups vegetable stock, low sodium if you purchase store-bought

3 tablespoons nutritional yeast

8 ounces whole grain linguine noodles or rotini noodles

1/4 cup chopped kale

Instructions

  1. Place the soy curls into a bowl and cover with hot water. Soak for 10-15 minutes, until fully hydrated. Drain and set aside.

  2. In a large pot, saute the onion, celery, carrots, and garlic in a small amount of water over medium heat until the onion is translucent.

  3. Add the vegetable stock, thyme, bay leaves, nutritional yeast, and a few grindings of black pepper, stir, and bring to a boil.

  4. Add the drained soy curls and pasta and cook for 10-15 minutes or until the pasta is cooked. Remove from the heat, discard the bay leaves, and stir in the chopped kale.
