Dairy-Free Cashew Mayo

This creamy and delicious plant-based Cashew Mayo is made with raw cashews and is so smooth and rich! It’s perfect for spreading on sandwiches, mixing into salads, or using as a dip. It's a healthier alternative to traditional mayonnaise, offering all the flavor without dairy or eggs.

Ingredients

1 cup raw cashews

1/4 to 1/2 cup water - start with 1/4 cup and add more depending on desired consistency

1 teaspoon brown mustard

1 teaspoon yellow mustard, optional but highly recommended

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1 tablespoon agave sweetener

salt - optional

Instructions

  1. Soak raw cashews in boiling water for 30 minutes.

  2. Drain the cashews and place them in a high-speed blender such as Vitamix, along with the remaining ingredients, and process until smooth and creamy.

  3. Stop and adjust the flavor and consistency. Add a little more mustard if desired and additional water if it’s too thick. I typically use 1/2 cup water which gives it the perfect consistency to spread on a sandwich or use in a potato salad. It’s much better to begin with less water as you can always add more, 1 tablespoon at a time.

Yields approximately 1 1/2 cups mayo.
