Chochoyotes (Masa Dumplings) in Pinto Bean Soup

Hearty, satisfying, and packed with delicious flavor, this Pinto Bean Soup with Masa Dumplings is an easy meal to pull together on busy weeknights or hectic weekends. Especially with a subscription spice kit from Wanderspice!

Ingredients

1 1/2 cups dry pinto beans, soaked overnight

2 quarts vegetable stock

2 ribs celery, diced

1 carrot, peeled and diced

1 small onion, chopped

2 Tbsp Wanderspice Deep Earth Blend - August 2021 Kit

1 cup masa harina (or corn flour)

1/2 cup warm water, you may need a little bit more

1/2 cup cilantro, chopped (optional)

Instructions

  1. In a large pot, soak pinto beans in water overnight.

  2. Drain and rinse beans and put back into the pot. Add vegetable stock and Deep Earth Blend. Bring to a boil, cover, and reduce heat to medium-low and gently simmer until beans are tender, about 1 1/2 hours.

  3. Once the beans are tender, prepare the dumplings. In a medium-size bowl, add masa harina and warm water. Mix until fully incorporated, you may need to add additional water, you want the consistency to be able to hold together to form dumplings, not crumbly.

  4. Allow to rest 5 minutes, then portion into 1/2 inch balls. Gently press halfway an indentation in the center of each dumpling. Place dumplings in the pot of pinto beans and simmer for 10 minutes, do not stir. After 10 minutes, gently stir the dumplings and cook an additional 5 minutes.

  5. Stir in cilantro and serve.

Serves 4

Note:

  • For those who use salt, Mexican Sea Salt is provided in your kit for additional seasoning if needed.

  • Delicious with a few splashes of Chipotle flavored hot sauce and topped with diced avocado.
