Thai BBQ Pizza
Ingredients
1 pre-made lavash - I use Atoria’s Whole Grain and Flax Lavash as it doesn’t contain oil
Dairy-Free Cheese Spread - just enough to for a good smear on the crust - I use this Creamy Cheese Spread recipe
Cauliflower - roasted until tender, you can also use battered cauliflower if you have any leftover after making Cauliflower Wings or use roasted cubed tofu
BBQ sauce - I use Bone Suckin Sauce because it doesn’t contain oil, I find it at my local Ace Hardware…who knew?
1 small zucchini, sliced thin
Red onion sliced thin - use as much as you like
Sweet pepper, sliced thin - I used mini peppers
Cilantro to garnish, chopped - this is a must so don’t skip as it really ramps up the goodness
Thai Sweet Red Chili Sauce - I use the Thai Kitchen brand
Instructions
Preheat oven to 425 degrees. If you have a pizza stone, throw that in and preheat that too!
Roast small cauliflower florets until tender-don’t overcook them as you want them to keep their shape…or to save time you can also microwave them. If you’re using leftover cauliflower wings, heat them up in the microwave or an air fyer. Once tender, toss in a small amount of bbq sauce to cover.
Place the onion, zucchini, and sweet peppers in a bowl and microwave for a minute or two until they’re tender.
If you’re going to bake on a pizza stone, place the lavash on a cutting board that doesn’t have an edge on it, you want to be able to slide the pizza onto the baking stone. For those not using a pizza stone, place the lavash on a cookie sheet.
Smear the lavash with a thin layer of cheese spread, just enough to cover.
Next, spread on a layer of bbq sauce, just enough to cover the cheese, too much and your ingredients will slide off.
Now you’ll layer on the veggies; zucchini, onions, sweet pepper, cauliflower.
For those using a pizza stone, gently slide the pizza from the cutting board onto the pizza stone. For those using a cookie sheet, place the cookie sheet in the oven.
Bake for 20 minutes checking for desired crispness at 15 minutes. Go longer for a crispier crust.
Remove from the oven and garnish with chopped cilantro and a drizzle of sweet red chili sauce before serving.
