Small Batch Yellow Potato Curry

Here’s a perfectly cozy dish for one or two people that is quick and easy and combines tender yellow potatoes with a rich, flavorful curry sauce. It's a simple yet satisfying way to enjoy a delicious homemade curry without the hassle of a large batch. Ideal for weeknight dinners or a special treat for yourself.

Ingredients

1/2 cup diced yellow onion

2 teaspoons minced garlic

2 teaspoons curry powder

1 teaspoon minced ginger or 1/2 teaspoon ground powdered ginger

1 teaspoon garam masala

1/4 teaspoon turmeric

1/2 cup water

2 cups unsweetened, unflavored almond milk

1 large yellow potato, cubed but not peeled

1/2 cup frozen mixed vegetables such as peas, carrots, corn, and green beans

1 tablespoon maple syrup

1/2 cup chopped kale

1 cup cooked brown rice or your favorite grain (optional)

Instructions

  1. In a medium skillet over medium heat combine the chopped onion, garlic, curry powder, ginger, garam masala, maple syrup, and turmeric. Add the water, stir, and bring to a gentle simmer. Simmer for 5 minutes.

  2. Stir in the almond milk, potatoes, and frozen vegetables and simmer the mixture for 10 minutes, uncovered.

  3. Add the kale and simmer an additional 5 minutes or until the potatoes are fork-tender.

  4. You can enjoy this dish on its own or serve it over brown rice or your favorite grain.
