Air Fryer Potato Wedges

I realize I’ve been on a bit of a potato kick lately. It comes from a comment I made to a friend telling her I eat about 10 pounds of potatoes each week. Of course the reply was a GASP, followed by a question on how I prepare them. I love them baked, mashed, as well as these crispy wedges.

Ingredients

2-3 pre-baked potatoes - I bake mine wrapped in foil at 375 degrees Fahrenheit for about 1 to 1 1/2 hours, depending on the size of potatoes I’m using. By using a pre-baked potato you’ll end up with a wedge that is crisp on the outside, yet fluffy on the inside. Leave the peel on as it’s packed with iron, potassium, and vitamin B-3.

Instructions

  1. Slice each potato in half and then cut the halves into quarters. Then cut the quarters in half.

  2. Place in a single layer into the air fryer basket. If you like, you can sprinkle them with a slight dash of garlic powder and a fresh grinding of black pepper.

  3. Place the air fry basket into the air fryer and bake at 400 degrees for 10 minutes. Check them and rearrange if necessary to ensure the cut sides aren’t touching other wedges. Bake an additional 5 minutes or a little longer until the cut edges are crispy and golden brown.
