Dairy-Free Ice Cream
It took me forever to try this recipe but once I did I’ve been going bananas ever since. It’s referred to as “nice” cream and here’s why. NO fat from the heavy cream and milk found in traditional ice cream! Best of all, this can go from processing to table in 5 minutes. Yes, in as little as 5 minutes you’ll have a creamy soft-serve style ice cream that your family will LOVE! I like to pour it into kid-friendly freezer pops and freeze them for healthy snacks later.
Fruit Variation:
3 large bananas, sliced and frozen on a single layer sheet pan
1/2 cup fresh fruit or thawed frozen fruit - any type of berry works best to compliment the banana flavor
Add the fruit to a high-speed blender or food processor and blend until smooth. Add the frozen bananas and blend until smooth scraping down the sides along the way. Freezer temperatures vary, so if your bananas are super hard and not blending, let them thaw a minute or two so you don’t stress your blender or food processor. Serve or freeze for enjoyment later.

Chocolate-Peanut Butter Variation:
3 large bananas, sliced and frozen on a single layer sheet pan
1 tsp cocoa powder
2 Tbsp peanut butter - I recommend natural peanut butter with no added oil, salt or sugar
1 Tbsp mini chocolate chips (optional)

1/4 cup nut milk - I prefer cashew milk for its rich creaminess
