Chocolate Covered Blueberry Banana Parfait

You’re a scant 15 minutes away from a taste of heaven with this Chocolate Covered Blueberry Banana Parfait.

Ingredients

1 ripe banana, avoid under-ripe bananas

10 or so blueberries, fresh or frozen

2 tablespoons non-dairy mini chocolate chips - I like the Enjoy! brand

1 tablespoon granola, try my Quick and Easy Granola

Instructions

  1. Preheat oven to 400 degrees fahrenheit. Tear a piece of aluminum foil large enough to wrap the entire banana.

  2. Make a deep lengthwise slit into the banana to with 1/2 inch of each end, taking care to not slice through the peel.

  3. In an oven-proof bowl or small loaf pan, place the aluminum foil. Set the banana, slit side up, onto the foil. Slightly open the slit, drop a few chocolate chips into the slit, follow up by lining up the blueberries from end-to-end. Top with remaining chocolate chips, and sprinkle with granola.

  4. Fold the aluminum foil together, crimping the edges to seal. Place in the oven and bake for 10 minutes.

  5. Carefully open the packet, cool slightly and enjoy!

Serves 1

Note of Variations:

  • Substitute blueberries with strawberries or raspberries.

  • S’mores parfait use mini marshmallows, chocolate chips and crushed graham cracker or Quick and Easy Granola.

  • A smear of peanut butter with chocolate chips would be mighty good too.
