Cocoa Bliss Balls

These Cocoa Bliss Balls are super easy to make, and require a handful of ingredients. They don’t contain any refined sugars and can be enjoyed as a dessert, a quick energy snack, tossed in a lunch box or to satisfy your evening sweet craving.

Ingredients:

1/2 cup rolled oats

8 dates - pitted and soaked

3 Tbsp natural peanut butter

1 Tbsp walnuts, chopped

2 Tbsp cocoa powder

5 Tbsp shredded, unsweetened coconut, cocoa powder or chopped walnuts to roll finished balls

Instructions:

  1. Place the dates in a small bowl for 10 minutes with just enough boiling water to cover the dates.

  2. Place rolled oats, peanut butter, walnuts and cocoa powder in the bowl of a food processor.

  3. Drain the soaked dates, reserving the soaking liquid. Add the soaked dates to the food processor along with a couple sprinkles of the reserved date water, less is more.

  4. Pulse the ingredients in the food processor until a crumbly dough is formed, adding more water if needed. You want the dough firm enough to hold together when you roll into a ball but not sticky wet and gooey.

  5. Scoop out a tablespoon or so of dough and roll in your hands to form a ball. Wet your hands in between rolling each one to prevent sticking to your hands. You’ll get around 16-18 balls, depending on the size you roll. As a finishing touch you can either roll them in shredded coconut, chopped walnuts or cocoa powder to lightly coat around each ball. Eat 2 of them : ) Then place the remainder in an airtight container and refrigerate. These Cocoa Bliss Balls also freeze well for future indulgence.
