Carrot Dogs

Yes, they look like carrots but taste like hotdogs Give them a try, I promise you won’t be disappointed!

Ingredients:

4 large carrots

1/8 cup apple cider vinegar

1/2 cup water

1 Tbsp tamari or soy sauce

1/4 tsp liquid smoke

1 Tbsp maple syrup

1 tsp smoked paprika

1 tsp dry mustard

1/4 tsp ground coriander

1/4 tsp garlic powder

1/4 tsp onion powder

dash of ground cloves

4 whole grain hot dog buns, warmed or toasted

Instructions:

  1. Peel carrots and trim to the length of your hot dog buns. Trim wide end to make a consistent thickness with the narrower end. Place carrots in a large saucepan; add water to cover. Cover pan and bring to boiling; reduce heat to low. Cook carrots 8 to 10 minutes, until just tender. Drain well.

  2. Place carrots in a large resealable plastic bag set in a shallow dish. For marinade… in a bowl combine the next 11 ingredients (through cloves) and ½ cup water. Pour over carrots; seal bag. Chill and marinate 12-24 hours, turning occasionally. Drain and discard marinade.

  3. Grill carrots over medium-high 10-15 minutes or until grill marks start to appear, turning occasionally. Or place carrots in a foil-lined baking pan and bake at 450°F 15- 20 minutes or until lightly browned on edges.

  4. Place carrots in buns and load on your favorite toppings.

Enjoy with your favorite toppings; ketchup, mustard, relish, onion, chili, sauerkraut.
