Black Bean Hummus

This hummus comes with rave reviews by all who have tasted it. What I like is that everything goes into the food processor and is ready to eat minutes later. This hummus makes a great dip with tortilla chips, spread in a wrap or heated and stuffed in a hard or soft shell taco. If you care to boost the pleasure, serve it with my Spicy Nacho Sauce and Black Bean Salsa.

Ingredients:

1 clove garlic

1 - 15 oz. can black beans, drained and reserve liquid

2 Tbsp lime juice

1 Tbsp Cashew Sour Cream

3/4 tsp ground cumin

1/8 tsp chipotle powder

1/4 tsp smokey paprika

Instructions:

Mince garlic in the bowl of a food processor. Add black beans, 2 tablespoons reserved liquid, lime juice, Cashew Sour Cream, and seasonings. Process until smooth, stopping to scrape down the sides as needed. Add additional reserved liquid and seasoning to achieve your preferred texture and taste.
