Whole Grain Pancake Mix

You can ditch the box of store-bought pancake mix and make your own with this super easy recipe. Once you try this, you’ll be making pancakes every weekend!

Ingredients

2 cups white whole wheat flour (also known as whole wheat pastry flour)

2 cups oat flour

1/4 cup ground flax seed

2 tablespoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

Instructions

  1. Combine white whole wheat flour and oat flour. Stir in flax seed, baking powder, baking soda, and salt. You could also sift the mixture to get everything combined.

  2. Store mix in an airtight container in the pantry.

To Make Pancakes:

3/4 cup pancake mix

3/4 plant milk such as almond or cashew milk

2 teaspoons maple syrup

1 teaspoon vanilla extract

  • Mix ingredients using a little more or a little less milk as needed to get the desired consistency.

  • Pour mounds of batter onto a heated non-stick skillet, spreading to form circles if needed.

  • Cook for a few minutes, until you have bubbles forming on top and the bottom is golden brown. Flip and cook for a few minutes on the other side.

  • Serve with maple syrup or any other pancake topping of your liking.
