Weeknight Black Bean Chili

This hearty Black Bean Chili is not only easy to make, it’s chock full of vegetables with just the right amount of seasoning, making it the best meatless chili ever!

Ingredients

2/3 cup onion, diced

2/3 cup celery, chopped

2 garlic cloves, minced

1 1/2 cups chunky salsa

1 - 15 ounce can black beans, rinsed and drained

3 cups sweet potato, peeled and chopped into bite-size pieces

1/2 cup yellow corn

1 teaspoon cumin, ground

2 teaspoon chili powder

1/8 teaspoon (scant) chipotle powder to taste (optional)

1 1/3 cup vegetable broth

1 1/3 cups water

Instructions

  1. Saute onions, celery and garlic in a large pot over medium heat until they become soft and translucent.

  2. Stir cumin, chili powder. and chipotle powder into the onion mixture and cook for 3 minutes.

  3. Add vegetable broth, water, and salsa and increase heat to medium-high. Bring to a boil, then reduce heat to medium-low.

  4. Add black beans, sweet potato, and corn. Cover and continue to simmer for 25 minutes, until sweet potato is tender.

  5. Serve with avocado slices, chopped cilantro, Cashew Sour Cream, and/or green pepper.
