Slow-Cooker Savory Steel-Cut Oats

Savory steel-cut oatmeal is a versatile dish that allows you to get creative in the kitchen. From tangy sundried tomatoes and earthy mushrooms to golden brown roasted veggies, the possibilities are endless. Experiment with different combinations of herbs and spices like fragrant rosemary, smoky paprika, or aromatic garlic to further elevate the flavors.

Ingredients

4 cups water or vegetable stock

1 cup steel-cut oatmeal

1/2 teaspoon poultry seasoning

1/4 teaspoon sage

1 teaspoon onion powder

1 teaspoon garlic powder

Instructions

  1. Combine all ingredients in a slow-cooker, set the temperature setting to Low, and let cook 7-8 hours. The first time you make this I suggest doing it on a day you’re at home so you can keep an eye on it when it’s getting close to the end of the cooking time. Slow-cooker temps can vary from cooker to cooker which may shorten or lengthen the cooking time.

Toppings

While you can eat the cooked oats on their own, they’re even better with savory toppings!

  • Sauteed mushrooms and onions.

  • Sauteed kale or spinach with minced garlic.

  • Roasted Brussels sprouts and butternut squash.
