Roasted Spaghetti Squash

Spaghetti squash, with its unique texture and mild flavor, is a versatile and healthy alternative to traditional pasta. If you're eager to dive into the world of this nutritious vegetable, here's a step-by-step guide on how to cook spaghetti squash to perfection.

Ingredients

1 spaghetti squash - a ripe squash should feel heavy for its size and have a consistent, bright yellow color

fresh ground black pepper

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. Slice the spaghetti squash in half lengthwise and scoop out the seeds and stringy pulp from the center of the squash creating a well. Sprinkle the inside with fresh ground black pepper and place cut-side down on a parchment paper-lined baking sheet. Use a fork to pierce holes into the exterior of the squash.

  2. Place in the oven and roast for 40 minutes until slightly brown on the outside and fork tender on the inside. This time will vary depending on the size of your squash.

  3. Once cooked, use a fork to gently scrape the flesh of the squash into spaghetti-like strands.

Serving Suggestions:

  • Toss the spaghetti squash with marinara sauce and fresh basil

  • Use as a bowl and stuff with stew, grains, or bolognese
