Quick Pickled Onions

I’m a big fan of serving pickled onions with all sorts of things; sandwiches and wraps, Mexican dishes, salads, scrambled tofu and of course burgers and hotdogs!

Ingredients

1 large onion, peeled and sliced thin, I use a mandolin

3/4 cup rice vinegar, be sure in not seasoned rice vinegar

1/4 cup water

2 tablespoons sweetener, such as maple syrup, honey, agave, cane sugar

Instructions

  1. Measure all ingredients into a small saucepan, stirring to combine.

  2. Heat over medium-high heat until the mixture comes to a boil. Feel free to follow this step by bringing it to a boil in your microwave oven.

  3. Place the thinly sliced onions in a pint-size glass mason jar. Pour the hot vinegar mixture over the onions, screw on the lid, give it a shake to coat the onions with the vinegar mixture.

  4. Let the onions marinate for 30 minutes. You may need to press the onions down with a spoon so that they’re all submerged under the vinegar mixture.

  5. Serve immediately, or refrigerate in a sealed jar for up to 2 weeks.
