Quick Pickled Onions
Ingredients
1 large onion, peeled and sliced thin, I use a mandolin
3/4 cup rice vinegar, be sure in not seasoned rice vinegar
1/4 cup water
2 tablespoons sweetener, such as maple syrup, honey, agave, cane sugar
Instructions
Measure all ingredients into a small saucepan, stirring to combine.
Heat over medium-high heat until the mixture comes to a boil. Feel free to follow this step by bringing it to a boil in your microwave oven.
Place the thinly sliced onions in a pint-size glass mason jar. Pour the hot vinegar mixture over the onions, screw on the lid, give it a shake to coat the onions with the vinegar mixture.
Let the onions marinate for 30 minutes. You may need to press the onions down with a spoon so that they’re all submerged under the vinegar mixture.
Serve immediately, or refrigerate in a sealed jar for up to 2 weeks.
