Meatless Goulash

What’s not to love about hearty comfort food made in one pot and ready in under 45 minutes? Pasta, celery, garlic, and onions in a seasoned tomato sauce. Yum! It’s one of my all-time favorite casserole dishes. Or as we call it in Minnesota, hotdish!

Ingredients

3 celery ribs, diced

1 medium onion, chopped

4 garlic cloves, minced

28 ounce can diced tomatoes

28 ounce can tomato sauce

1 tbsp chili powder

1 tsp sweet paprika

1/2 tsp smoked paprika

Black pepper to taste

8 ounces any dry pasta, I prefer brown rice penne

Instructions

  1. Add onions, celery and garlic to a large Dutch oven or pot on medium high heat and saute until the celery and onion are tender. This may take up to 15 minutes or longer depending on the size of your dice. You may need to add a teaspoon or so of water to prevent sticking to the pot.

  2. Stir in the diced tomatoes, tomato sauce, chili powder, sweet paprika, smoked paprika and a good grinding of black pepper. Bring to a slow simmer.

  3. Stir in dry pasta, mix well and cover and simmer an additional 20 minutes, stirring occasionally.

Serves 4

  • Variation - Add chopped bell pepper and/or dark kidney beans.
