Savory Oatmeal Breakfast Fritters

These Savory Oatmeal Fritters put a new spin on breakfast oatmeal. It’s a nice change-up from the sweet bowl of oatmeal or oatmeal pancakes we typically eat. Serve with steamed veggies and you have the breakfast of a plant-based champion!

Ingredients

1/2 cup oatmeal

1 teaspoon ground flax

1/2 teaspoon chia seeds

1/4 cup cooked grains such as brown rice, wild rice, farro

1 tablespoon chopped walnuts

1 scallion, thin slices

1/8 teaspoon ground poultry seasoning

1/8 teaspoon ground sage

1/8 teaspoon onion powder

1/8 teaspoon garlic powder

1 tablespoon finely chopped kale

fresh ground black pepper

1 cup boiling hot water

Instructions

  1. Mix all dry ingredients including kale into a small mixing bowl. Add boiling hot water, stir. Allow the mixture to sit for 30 minutes or so until the oatmeal has absorbed all the water and you have a thick mixture that holds together.

  2. On medium-high heat, heat an electric panini grill, waffle iron, or non-stick skillet. Make sure it’s fully heated before adding the mixture so it doesn’t stick. Make 4 equal size mounds on your heated surface, this may vary depending on how large a surface you’re working with. Close the lid. If using a skillet, press the mixture into a round shape much like a pancake. If you’re using a skillet, carefully flip the fritter and brown the other side. You want both sides to have a nice golden brown, crusty exterior.

  3. Serve with steamed vegetables or Scrambled Tofu.

Yield: 4 oatmeal fritters
