Mexican Hummus
Ingredients
1 - 16 ounce can fat-free refried beans - any brand will do, make sure it doesn’t contain oil or fat
juice of 1 lime
1/4 cup tahini
3 garlic cloves, finely minced
3/4 teaspoon ground cumin
1/4 teaspoon smoked paprika
1/8 teaspoon chipotle powder
cilantro for garnish
Instructions
In a glass bowl combine all ingredients. Take an immersion hand blender and pulse until you have a smooth paste. If you don’t have an immersion blender just give it a good stir.
Place in serving dish. Cover loosely and keep refrigerated until serving.
Serve with tortilla chips, spread in a wrap, or add a dollop on top of tacos.
