Mexican Hummus

Hummus, a Middle Eastern dish of pureed chickpeas, lemon, garlic and chickpeas has become a household staple in American homes and parties. I decided to take the hummus concept and use a can of refried beans for a tasty twist on this exotic and healthy recipe. Wow, you’re going to LOVE this!

Ingredients

1 - 16 ounce can fat-free refried beans - any brand will do, make sure it doesn’t contain oil or fat

juice of 1 lime

1/4 cup tahini

3 garlic cloves, finely minced

3/4 teaspoon ground cumin

1/4 teaspoon smoked paprika

1/8 teaspoon chipotle powder

cilantro for garnish

Instructions

  1. In a glass bowl combine all ingredients. Take an immersion hand blender and pulse until you have a smooth paste. If you don’t have an immersion blender just give it a good stir.

  2. Place in serving dish. Cover loosely and keep refrigerated until serving.

  3. Serve with tortilla chips, spread in a wrap, or add a dollop on top of tacos.

Serves 4-6
