Grilled Whole Cauliflower

Get ready to savor the smoky goodness of grilled cauliflower with a rich BBQ coating! This plant-based delight is the perfect addition to your summer grilling lineup. Ingredients

1 large cauliflower head, with leaves still attached

1/4 cup BBQ sauce, your favorite or my oil and sugar-free version of OMG BBQ Sauce

Instructions

  1. Trim the stem of the cauliflower so the cauliflower will stand upright on the grill. If the cauliflower has leaves attached, DO NOT trim them off.

  2. Bring a large pot of water to a boil over high heat. Submerge the cauliflower into the water, stem-side up. Boil until the florets have slightly softened, but still intact, about 10-12 minutes.

  3. Meanwhile, turn on your Traeger grill to 450 degrees Fahrenheit.

  4. Once the cauliflower has cooked, remove it from the pot and place stem-side down on a wire rack to drain allowing it to air-dry for 5 minutes.

  5. Using your hands (be careful it’s hot), or use two forks, and gently spread apart the florets to create some crevices. Rub the florets with half of the BBQ sauce. Roast on the Traeger until the florets are golden brown and fork-tender, around 45 minutes.

  6. Remove from the grill and drizzly with remaining BBQ sauce. Serve immediately and enjoy!
