Deb’s Whole Wheat Dinner Rolls

I can’t think of a more appetizing aroma than fresh baked dinner rolls. My friend Deb over at Eat Yourself Healthy developed this classic dinner roll recipe with whole grain flour instead of bleached white flour, making it super healthy and full of fiber.

Ingredients

1 package Active Dry Yeast

1/4 cup Warm Water

1 cup unsweetened-unflavored plant milk (warmed up) - my preference is cashew milk but any plant milk will work

1/4 cup sugar - coconut or monk fruit

1/4 cup unsweetened applesauce

1 tsp salt

1 1/2 cups whole wheat flour

2 Cups whole grain unbleached flour

1tbsp ground flax seed mixed with 3 tablespoons water

Spray oil

Seed sprinkles; poppy seeds, sesame seeds, sunflower seeds (optional)

Instructions

  1. In a small bowl dissolve yeast in the warm water.

  2. In a large bowl combine plant milk, sugar, applesauce and salt. Add whole wheat flour and mix well.

  3. Add yeast and flax mixture and mix in well.

  4. Gradually add in remaining whole grain flour an mix to form a soft dough.

  5. Place in a bowl that has been sprayed with oil, turning over so you have the oiled surface facing up. Cover and let rise until doubled in size ( 1 to 1 1/2 hours, depending on the temperature of your kitchen, if your kitchen is cool it may take a little longer)

  6. Turn out onto a lightly floured surface and shape as desired; round balls, knots, any shape will work. Place in a baking baking sprayed with oil. Sprinkle with seeds if desired. Cover and let rise again until double in size, about 30-45 minutes. Preheat oven to 400 degrees near the end of this second rise.

  7. Bake at 400 degrees for 12-15 minutes.

Yields 2 dozen rolls
