Savory Chickpea Waffles
Ingredients
1 cup chickpea flour
1/2 teaspoon baking soda
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
a grinding of black pepper
1 cup water
Instructions
Preheat your non-stick surface waffle iron. My waffle iron doesn’t have a temperature control adjustment so I’m going to suggest medium to medium high heat if you can adjust the temp on yours.
In a small bowl whisk together all dry ingredients. Add the water and stir until batter is smooth.
Pour the amount of batter suitable for the size of your waffle iron. Close lid and cook for 4 minutes. Open lid, you want your waffle golden with slight crispness on the edges. You may need to cook for a few more minutes.
Serving Suggestions
If you don’t have a waffle iron, use a non-stick skillet to make a pancake-omelet. Use 1/3 cup batter, and cook until hot and bubbly, flip and cook the other side
Top with grilled vegetables and serve open faced or between two waffles. Drizzle the top with this yummy Creamy Cheese Sauce.
