BBQ Eggplant Burgers

These are so silly simple I’m almost embarrassed to post such an easy recipe. For this finger-licking good burger, all you need is an eggplant and your favorite bbq sauce.

Ingredients

1 eggplant, keeping in mind the width needs to fit a hamburger bun

1/2 cup or so bbq sauce, l use Bone Suckin’ Sauce-look for a sauce that does not contain high fructose syrup

Whole wheat hamburger buns

Instructions

  1. Preheat oven to 450 degrees fahrenheit and prepare a large baking sheet with either parchment paper or a silicone mat.

  2. Slice the eggplant into about 1/4” thick slices, leaving the peel on. This is what will hold the slices into shape.

  3. Spread a thin layer of bbq sauce on each side of the slices and arrange them on the prepared baking sheet.

  4. Place in the oven and bake for 15 to 20 minutes, until they are browned. Remove with a spatula and layer 3 or 4 slices onto a hamburger bun and load up with your favorite toppings such as leafy greens, sliced onion, tomato, and pickles.

Serves 2-4 depending on the size of your eggplant.
