Air Fryer “Sun-Dried” Tomatoes

This recipe is so ridiculously simple I seriously had to slap myself for not thinking of it sooner. I had guests coming for dinner and realized I hadn’t made my traditional recipe of Slow Roasted Tomatoes, which takes 4-6 hours in the oven. This forced me to get creative. Aha, that’s what air fryers are for, right? Meet my air fryer sun-dried tomatoes. These make the perfect addition to any salad, pasta dish, or topping on a pizza. It’s also a great way to use up tomatoes before they spoil.

Ingredients

Tomatoes - any variety

Fresh ground black pepper

Italian seasoning or Herbs de Provence - optional

Instructions

  1. Slice tomatoes into 1/4” thick slices or if you’re using grape or cocktail tomatoes, cut them in half.

  2. Place tomato slices in the air fryer basket in a single layer.

  3. Grind some black pepper on top as well as a light sprinkle of herb seasoning if you’re using them.

  4. Place basket into the air fryer, set temperature to 250 degrees and air fry for 30 minutes to an hour, checking every 15 minutes to achieve the desired consistency. I like mine a little bit soft.

  5. Transfer tomatoes to a plate or storage container to cool. Repeat the process with any remaining tomatoes.

  6. Use right away or refrigerate for later use. You can also freeze them.
