Weeknight Black Bean Chili
Ingredients
2/3 cup onion, diced
2/3 cup celery, chopped
2 garlic cloves, minced
1 1/2 cups chunky salsa
1 - 15 ounce can black beans, rinsed and drained
3 cups sweet potato, peeled and chopped into bite-size pieces
1/2 cup yellow corn
1 teaspoon cumin, ground
2 teaspoon chili powder
1/8 teaspoon (scant) chipotle powder to taste (optional)
1 1/3 cup vegetable broth
1 1/3 cups water
Instructions
Saute onions, celery and garlic in a large pot over medium heat until they become soft and translucent.
Stir cumin, chili powder. and chipotle powder into the onion mixture and cook for 3 minutes.
Add vegetable broth, water, and salsa and increase heat to medium-high. Bring to a boil, then reduce heat to medium-low.
Add black beans, sweet potato, and corn. Cover and continue to simmer for 25 minutes, until sweet potato is tender.
Serve with avocado slices, chopped cilantro, Cashew Sour Cream, and/or green pepper.
