Watermelon Poke

Ingredients

1 cup watermelon, diced small

1 1/2 Tbsp tamari, soy sauce or coconut aminos

1/2 tsp rice vinegar

1 tsp Furikake (optional - this will give you the fish flavor)

Instructions

  1. in a small bowl whisk together the tamari, rice vinegar and Furikake.

  2. Add the diced watermelon and give it a good stir.

1 serving

  • Create a sushi stack with the following ingredients; from the bottom up - rice, finely diced cucumber, finely diced carrots, diced avocado, watermelon poke, edamame, cilantro leaves, sesame seeds.

  • Poke Bowl; a bed of greens topped with rice, grated carrots, diced cucumber, steamed broccoli, sliced bell pepper, edamame, watermelon poke.

  • Delicious served with plant-based mayo with a little siracha stirred in, pickled ginger, and/or wasabi paste.
