No-Bake Power Nibbles

Ingredients

1 cup dry old-fashioned rolled oats

2/3 cup coconut flakes

1/2 cup peanut butter, make sure peanuts are the only ingredient

1/2 cup ground flax seed

1/2 cup non-dairy chocolate chips, I like the Enjoy brand

1/3 cup maple syrup

1 teaspoon vanilla extract

Instructions

  1. Stir all ingredients in a medium-sized bowl until thoroughly mixed. Cover and chill in the refrigerator for half an hour.

  2. Once chilled, roll into balls of whatever size you like, I use 1 tablespoon as my measuring guide. Store in an airtight container in the refrigerator for up to 7 days. Or freeze them for up to 3 months.

  3. Yields about 20-25 Nibbles, depending on the size you roll them.
