With Wanderspice you can go on global culinary adventures without ever having to leave your kitchen. Each month you’ll receive a kit featuring a particular country. Their August kit features Mexico. I’ve collaborated with Wanderspice to put a whole food plant-based twist on their already delicious vegetarian recipes. You can find out more how Wanderspice works by visiting their website. This recipe features their Deep Earth Blend, the perfect mix of authentic Mexican flavors that are single origin spices that are fair to farmers and better for you!

Ingredients

1 1/2 cups dry pinto beans, soaked overnight

2 quarts vegetable stock

2 ribs celery, diced

1 carrot, peeled and diced

1 small onion, chopped

2 Tbsp Wanderspice Deep Earth Blend - August 2021 Kit

1 cup masa harina (or corn flour)

1/2 cup warm water, you may need a little bit more

1/2 cup cilantro, chopped (optional)

Instructions

  1. In a large pot, soak pinto beans in water overnight.

  2. Drain and rinse beans and put back into the pot. Add vegetable stock and Deep Earth Blend. Bring to a boil, cover, and reduce heat to medium-low and gently simmer until beans are tender, about 1 1/2 hours.

  3. Once the beans are tender, prepare the dumplings. In a medium-size bowl, add masa harina and warm water. Mix until fully incorporated, you may need to add additional water, you want the consistency to be able to hold together to form dumplings, not crumbly.

  4. Allow to rest 5 minutes, then portion into 1/2 inch balls. Gently press halfway an indentation in the center of each dumpling. Place dumplings in the pot of pinto beans and simmer for 10 minutes, do not stir. After 10 minutes, gently stir the dumplings and cook an additional 5 minutes.

  5. Stir in cilantro and serve.
